Train it on what you already have
Your site, course content, call recordings, long form answers you have written before. You are not writing new material, you are pointing at the material that exists.
Read the first drafts and be unimpressed

Will AI coaching replace human coaches?+
No. The part of coaching that depends on a real relationship, such as challenging someone who is avoiding a hard truth, is not the part AI does well.
